A Model Building Code is a set of definitions, rules and guidelines that govern the construction of a building – including a commercial kitchen. These often include detailed information about gas plumbing and electrical installations, including both infrastructure requirements (i.e., gas piping, sizing or valves) and specifications regarding the installation of specific gas appliances. Since there are many different types of products included in a building, the Model Building Codes reference “Product Standards.”
Each of these installation codes includes a section that addresses the installation of flexible gas appliance connectors and accessory devices such as valves, quick-disconnects and gas convenience outlets. The codes require that the gas appliance connector and accessory devices are listed or certified to the appropriate product standard.
